The Circle of Life

When T.J. and I went to California for our Honeymoon, my cousins took us out to eat and bought us tickets to the opening night of The Lion King in Orange County.  I love musicals, I’ve seen a bunch of them at the Arinoff in Cincinnati with my mom, but I hadn’t ever had the chance to see this one live.

Today when I was listening to my Pandora-Glee Station, “The Circle of Life” song came on and it reminded me of that amazing show.  I found a YouTube video for it, check it out here!

It was an incredible show and a highlight of our trip.  Thanks again, Paul, Kathy, Rick, and Dianne! We had a great time!

Dear State Government,

I came to get a new driver license at the DVM today and your hours said Monday-Thursday.  I thought we were in America with the 5-day work week.  And you, you’re supposed to represent and run America, so how come there’s an exception for you all? I don’t know why you think you can take every Friday off while the rest of us have to work everyday.

It’s quite rude and I do not understand it.

Jacob Black and Pad Thai

Last night, Hannah and her date Jacob Black came over for dinner. (You might have heard of him, he’s a werewolf.)  It was a blast to hang out with them and swap stories.  Jacob told us about this brutal fight he was in a few months ago, but he won!  Oh and he told us how he’s so excited to be dating someone with the same roots, since Hannah is also Native American.

Anyway, I made Pad Thai because it’s his favorite.  Maybe next time he comes over, you can come too.

Here’s the Pad Thai recipe:

4 cups water
1 package (6 to 8 oz) linguine-style stir-fry rice noodles (rice stick noodles)
1/3 cup fresh lime juice
1/3 cup water
3 tablespoons packed brown sugar
3 tablespoons fish sauce or soy sauce
3 tablespoons soy sauce
1 tablespoon rice vinegar or white vinegar
3/4 teaspoon ground red pepper (cayenne)
3 tablespoons vegetable oil
3 cloves garlic, finely chopped
1 medium shallot, finely chopped, or 1/4 cup finely chopped onion
2 eggs, beaten
12 oz frozen cooked peeled deveined medium shrimp, thawed
1/4 cup finely chopped dry-roasted peanuts
3 cups fresh bean sprouts
4 medium green onions, thinly sliced (1/4 cup)
1/4 cup firmly packed cilantro leaves
  1. In 3-quart saucepan, heat 4 cups water to boiling. Remove from heat; add noodles (push noodles into water with back of spoon to cover completely with water if necessary). Soak noodles 3 to 5 minutes or until noodles are soft but firm. Drain noodles; rinse with cold water.
  2. Meanwhile, in small bowl, stir lime juice, 1/3 cup water, the brown sugar, fish sauce, soy sauce, vinegar, red pepper and 1 tablespoon of the oil until well mixed; set aside.
  3. In nonstick wok or 12-inch nonstick skillet, heat remaining 2 tablespoons vegetable oil over medium heat. Cook garlic and shallot in oil about 30 seconds, stirring constantly, until starting to brown. Add eggs. Cook about 2 minutes, stirring gently and constantly, until scrambled but still moist.
  4. Stir in noodles and lime juice mixture. Increase heat to high. Cook about 1 minute, tossing constantly with 2 wooden spoons, until sauce begins to thicken. Add remaining ingredients except cilantro. Cook 2 to 3 minutes, tossing with 2 wooden spoons, until noodles are tender. Place on serving platter. Sprinkle with cilantro. Garnish with additional chopped dry-roasted peanuts and green onions if desired.

P.S. Make sure you have all of your ingredients ready to go before you start this recipe.  I learned that the hard way this time.

Carrie O.

This is my friend Carrie:

I think I have blogged about her before. But because she left the 100th comment on my blog, I thought I would devote a post just to her.

So anyway, Carrie is from Oklahoma, which automatically makes her awesome because it’s a random home state, just like mine!  We lived in the same Freshman dorm hall together.

Our friendship grew on the day of her birthday, our freshman year.  It was during Thanksgiving break, so no one was home in our hall and I just got back into town. I was so sad that she didn’t have anyone to celebrate with on her birthday, so we hung out in my dorm room together.  We had a bunch of laughs, especially when I put on a fashion show for her with all my ugly clothes….”You may think this is an animal!”

Well, Carrie and I became good friends, along with her roommate Bianca and my roommate Dana.  Probably the best memory I have of all of us was when we went to East High in Salt Lake where High School Musical was filmed.  We were all totally obsessed with HSM and especially with Zac Efron and ashamed to say it now, Vanessa Hudgens.  In fact, on the way there, we saw a limo, convinced ourselves that they were inside and I was so excited, I cried.

We even made a video to a song from HSM.  (It may seem like we were lovers in this video, but it’s supposed to be two friends upset at each other… plus we couldn’t find a boy who’d do it for us…)

To wrap up this post, I will write one of my famous acrostic poems:

C is for Cramming all of her work into the last minute, because she likes to procrastinate, just like me.

A is for Advertising because that’s her major.  We are always in classes together and love working together.

R is for Refined.  Carrie never says anything mean or rude.  She is the sweetest!

R is for Really happy.  Carrie always is smiling and laughing!  She’s never in a bad mood, and if she is, she laughs it off!

I is for I’m jealous of her Zac Efron posters.

E is for Especially looks like D.J. from Full House when she gets “Yearbooked”

Dino-mania

I love dinosaurs.  It started a few years ago when my roommate Bethany did a dinosaur impression. I became obsessed.

I love dinosaur formed foods, like this cake I saw at the store.

I love movies with dinosaurs (like Clifford).

I love dressing up like dinosaurs (like the past two halloweens).

But most of all, I love movies about dinosaurs.  That’s why T.J. and I are going to watch the Jurassic Park series this week.  Starting tonight at 11 pm sharp.  I can’t wait!

Shrek, do the roar!

I haven’t been feeling too well this week so I have been stuck in the house a lot.  I was beginning to have cabin fever, so T.J. said he would take me to see any movie I wanted to see.  I decided on Letters to Juliet because it’s in the dollar theater and everyone says it was great.  T.J. is a great sport, and so he agreed to the chick flick.

We got our tickets ahead of time and went to the creamery for a kids meal (it’s an amazing deal: hamburger, fries, drink, icecream all for $3.50!).  After eating, we headed back to the theater and were about ten minutes early, and the theater was already packed!

There were two seats left next to a couple who brought their baby.

No thanks.

So with the help of my iPhone, we headed over to see Shrek Forever After, a few theaters down starting in a few minutes.

It actually was pretty good.  Funny.  Cute.  Precious.  I even cried?? What? No…..

Creative Problem Solving

For those who do not know, I had an internship for about 6 months at a place called Lava 7.  They are social media marketers.  It was a blast.  I learned a lot and it really made me want to continue in social media marketing.

Anyways, now that my internship is over, I am supposed to turn in a portfolio and resume to the internship office.  Well, since I worked with social media in my internship, I decided to create my portfolio and resume online.

So, check it out HERE.  Let me know what you think and if you see any mistakes or errors.  A few things that I still need to do is add more items to my portfolio, change the font to a sans serif, and get my own domain name.

It’s still a work in a progress, but hopefully it’s a good start.
