Well, it happened. I am now one of those girls who watches The Bachelor. But before you start judging me, just know that the main reason I got into it is because a couple of girls in my ward watch it together each week and it’s just about the BTOML. We all chat about how crazy the girls are, eat way too many snacks, and gossip about who we think will get kicked off next. We would love to have you join us… we watch it on Mondays at 9:15.
So, for all the rest of you Bachelor followers, I want to know who is your favorite? I love Kaycee B from Tennessee. I think she is darling! And my least favorite is that model girl he went on a date with. She is so full of herself and has ZERO personality.
And I can’t believe I just wrote a whole post about this show. How embarrassing.
I’ve got another crock pot recipe for you. These are the best, especially now that I’m a mom and I never know if I’ll have time in the evening to make dinner. So, I just prepare something in the crock pot when Eva takes her afternoon nap and get to smell the deliciousness all day long.
Ingredients
- 4 steaks (about 1 lb total)
- 1 1/2 cup water
- Gravy packet
- Ranch dressing packet
- Italian dressing packet (next time I might eliminate this)
- Red Potatoes
- Carrots
Directions
- Wash and cut potatoes into quarters. Add them to crock pot.
- Add carrots to pot (I used about a half of the bag of baby carrots.)
- Put steaks on top of veggies.
- In small bowl, mix packets of seasonings and water.
- Pour mixture over veggies and steaks.
- Cook on low for about 5 hours.
You can substitute a roast in the place of steaks. I just used steaks because they were on sale at the grocery this week. Sorry, no pictures!
- It’s amazing what a couple hours of extra sleep can do. When T.J. takes the baby for a couple of hours and I get a little nap and get to finish up so stuff around the house, my day gets better by 200%.
- I had a nightmare last night. I don’t really remember it, but I woke up because it was so scary.
- In one week, I get to start exercising again! I can’t wait… goodbye stretched out skin!
- I made steaks in the crock pot last night. They turned out pretty good… I’ll post the recipe today.
- I want snow… I NEED snow!
- I can’t swear by it, but I think Eva might have smiled back at me yesterday. If it was not voluntary, then she sure has perfect timing because it made me day. I love that little girl!
- I watched Moneyball last night. It was not what I expected, but it was still really good.
- We got back photos from T.J.’s cousin who is a photographer and took photos of Eva when she was two weeks old. I’m kind of obsessed with them.
- I’m thinking it might be time to start putting Eva in her crib in her own bedroom. For all you mothers out there, when did you move your babies out of your room?
- Don’t you love the movie Father of the Bride 2? I have it on in the background right now.
On this day two years ago, T.J. and I got engaged. You can read the engagement story here. I cannot believe how fast time flies! Today we are happily married and celebrating the one month birthday of our little Eva.
I love you, T.J., and I am so grateful to have you in my life. Chipped tooth and all.
Last night I made the most delicious pork chops in the crock pot. It was super easy and they were so tender. You have got to try them!
- 6 pork chops (cut 1/2 – 3/4-inch thick)
- 1 onion (sliced or chopped)
- 1 tablespoon fresh minced garlic
- 1/2 teaspoon crushed red pepper flakes (optional or to taste)
- 1/4 cup brown sugar
- 1 teaspoon ginger
- 1/2 cup soy sauce
- 1/4 cup ketchup
- 1 -2 tablespoon fresh minced garlic
- 1/2 teaspoon black pepper (or to taste)

Place the pork chops in the crock pot.

Sprinkle with onions and garlic over and around the chops.

In a bowl mix together all remaining ingredients except the salt; pour over the chops.

Cook on low setting for about 7 hours or until the pork chops are cooked through and tender (cooking time will vary slightly depending on the size of your pork chops). I cooked mine for 4.5 hrs on high and they were cooked through.

I hadn’t really taken time to think about my new year’s resolutions, but after watching The Office episode today where Pam makes everyone write down one goal for the year, I decided I should write mine down too.
Spiritual Goals
- Study (not just read) the scriptures daily
- Go to the temple once a month
- Hold an FHE every Monday
- Do my Visiting Teaching every month
- Remember to do family prayer every night
- Get down to my wedding weight
- Make 3-4 dinners a week
- Be able to run a mile without stopping… I know that sounds really easy, but I have never been a runner!
- Work out 4 times a week
- Eat more fruits and vegetables
- Stick to our budget
- Read at least one book a month
- Always show my husband that I love him
- Be patient
- Take more photos and videos of Eva
