I asked Hannah what I should blog about and she told me to write a post about exercise and eating healthy. My girlfriends just saw me eat a bunch of no-bake cookies tonight at The Bachelor, so I feel like a hypocrite. But I promise-for the most part-I really try hard to watch what I eat. So, Hannah. Here are five tips. Just for you… even though you’re actually the pro at exercising and you should be writing a blog post for me.

  1. Get in a daily routine and stick to it. Once your days get structure, it is easier to plan ahead what you will eat and make time for exercise.
  2. Don’t keep junk food in the house. If it’s not around, you can’t eat it.
  3. Find a workout that you enjoy. I used to put on Billy Blanks and complain the entire time because he annoyed me so much. I’ve decided to get rid of that DVD and find something I like better. Right now I’m in love with Jillian Michaels’ mini workouts on Hulu.
  4. Switch up your workouts. A couple days a week do weights or pilates. The other days get some cardio in. You won’t get bored and your body needs both types of exercise.
  5. Keep track of what you eat using an iPhone app (I use Daily Plate) or go the old fashion route and hand write it in a journal. I know I’ve said this before-but if you want to see the pounds drop, keep track of your calories. But something I learned this year is that you have to treat yo’self occasionally. Go out once in a while and just don’t worry about it. TREAT YO’SELF 2013!

There’s just something about the bright sun shining down on the snow and through my window that puts me in a good mood. It’s nice to see the sun after so many cloudy days. And Mondays, they can either be good or bad. Today, I’ve decided it’s going to be good. That way my whole week is off to a good start.

Since I returned from Kentucky, I have been making meal plans for each week. It is one of my many New Year’s Resolutions. We are half way through January and I’m still doing it, so I think I deserve an award… right?

So, what’s for dinner tonight? A recipe I haven’t tried before but sounded delicious-I found it on a blog called The Girl Who Ate Everything.

Slow Cooker Tomato Basil Parmesan Soup

It’s already simmering in my crock pot making my home smell wonderful.

Here’s the recipe:

Ingredients

  • 2 (14 oz) cans diced tomatoes, with juice
  • 1 cup finely diced celery
  • 1 cup finely diced carrots
  • 1 cup finely diced onions
  • 1 teaspoon dried oregano or 1 Tablespoon fresh oregano
  • 1/4 cup fresh basil
  • 4 cups chicken broth
  • ½ bay leaf
  • ½ cup flour
  • 1 cup grated Parmesan cheese
  • ½ cup butter
  • 2 cups half and half, warmed (substitute milk for less calories)
  • 1 teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Add tomatoes, celery, carrots, chicken broth, onions, oregano, basil, and bay leaf to a large slow cooker.
  2. Cover and cook on LOW for 5-7 hours, until flavors are blended and vegetables are soft. At this point I added all of the vegetables to a blender and blended until smooth. If you have a hand immersion blender that would work great. If you prefer a chunkier texture you can leave it as is or even blend just some of it. Return blended veggies back to the slow cooker.
  3. About 30 minutes before serving prepare the roux. Melt butter over low heat in a skillet and add the flour. Stir roux constantly with a whisk for 5-7 minutes. Slowly whisk in 1 cup hot soup. Add another 3 cups and stir until smooth. Add all back into the slow cooker. Stir and add the Parmesan cheese, warmed half and half, salt and pepper.
  4. Cover and cook on LOW for another 30 minutes or so until ready to serve. Serve with warm rolls and a green salad.

Tomorrow we are going to T.J.’s cousin’s homecoming talk and afterwards, a family brunch. I made these delicious frittatas to share and an extra batch to freeze for breakfasts this week. I tried two different recipes. They both turned out well, but the second recipe is absolutely delicious because there are more spices. You must make them and have them for breakfast this week. They are supposed to freeze well if you store tightly wrapped. Then just microwave them.

Recipe 1:

Ingredients

  • Nonstick vegetable oil cooking spray
  • 8 large eggs
  • 1/2 cup whole milk
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon salt
  • 4 ounces thinly sliced ham, chopped
  • 1/3 cup freshly grated Parmesan
  • 2 tablespoons chopped fresh Italian parsley leaves

Directions

Preheat the oven to 375 degrees F.

Spray 2 mini muffin tins (each with 24 cups) with nonstick spray. Whisk the eggs, milk, pepper, and salt in a large bowl to blend well. Stir in the ham, cheese, and parsley. Fill prepared muffin cups almost to the top with the egg mixture. Bake until the egg mixture puffs and is just set in the center, about 8 to 10 minutes. Using a rubber spatula, loosen the frittatas from the muffin cups and slide the frittatas onto a platter.

Recipe 2:

Ingredients

  • 8 eggs
  • 1/3 cup milk
  • onion powder (I didn’t measure it out-around 1/2-1 t)
  • garlic powder (1/4-1/2 t)
  • italian seasoning (1/2 t)
  • 4 ounces thinly sliced ham, chopped
  • 1/4 cup feta cheese
  • 1/4 cup freshly grated Parmesan cheese
  • 1 cup spinach, chopped
  • Pinch of salt
  • Pepper

Directions
Preheat oven to 350 and spray muffin tin with non-stick cooking spray. In a bowl, beat eggs with milk, onion powder, garlic powder, italian seasoning, salt, and pepper. Add feta, Parmesan, spinach, and ham. Pour into muffin pan, filling 2/3 of the way full. Baked 15-25 minutes (for large muffin size) or until center is firm and top is light brown. Enjoy!

  2. Monday night, I had friends over to watch The Bachelor premiere. Uhm, hello. It was awful… I mean, awesome. I hate that show so much sometimes, but I also just love it. The awkwardness of Sean meeting all the girls made me cringe so much that I had to cover my eyes! It will be a fun season. See all you girls at my house next week, same time!
  3. I’m still feeling leftovers of my flu. I can’t get rid of this sore in my throat. Whenever I swallow, my ear hurts a bit too. Last night I woke up in the night from coughing so much. Should I go back to the doctor?
  4. For the past couple days, Eva and I have shared a green smoothie. She loves it so much that sometimes she cries when it’s gone! It feels incredible getting a couple of servings of green veggies and fruits in before 9 am!
  5. I miss my parents and Kentucky. I love it here, I really do, but coming back is always hard.
  6. I’m starting to get really anxious about our future. The condo we live in is in the process of going on the market, so we could be out really soon if it sells right away. But it may take a while. You just never know with these types of things. So, fellow wardies, pray that we get to stay here until May-as planned.
  7. I wish we could go to Vegas for MLK weekend. This cold weather is crazy! But Vegas and a 1-year old doesn’t sound like a complete joy.
  8. I did Insanity for the first tie in a while this week. Holy cow. I. am. sore.
  9. T.J. randomly brought me home roses on Tuesday. It made me cry.
  10. I’m in the mood to be crafty but don’t have any crafts to be crafted. Ideas?

On Friday, December 21, my family and I saw Amahl and the Night Visitors on Xavier’s campus in Cincinnati. For those of you not familiar with this opera, it is about the three kings who stop by a poor woman’s home on their journey. The opera is about the interaction between the kings and the woman’s son-Amahl. We grew up listening to the music and seeing the opera every couple Christmases, but it had been quite some time since I saw it live. If you ever have the chance to see this opera, you should definitely go! The particular version we saw this year used huge puppets as the kings with the opera singers back with the orchestra. From a creativity point, it was very clever and the puppets were beautiful but I really missed seeing the expressions of the singers.

Unfortunately, as the night progressed, my flu was really starting to kick in. So, we hurried home after the show and I went to bed at 9!

 

On Thursday, December 13, I went up to Salt Lake with three of my girlfriends to see if we could get standby tickets to the Mormon Tabernacle Choir Christmas Concert-Dress Rehearsal. My mom went last year and was able to get tickets without any problem, so we decided to take the chance and if wouldn’t work out we planned on walking around City Creek and getting Cheesecake. Win/Win either way.

We were able to get two tickets, but there were four of us and we didn’t want to split up so we decided to watch the projection of it in the Tabernacle. It was still a great concert and so fun to get out for the night with my friends.
