Today is beautiful so we are going into the city for the afternoon. On days like this, I want to sing and dance the following song as I go out into the city, except Eva would probably scold me saying, “NO SINGING!” like she did a minute ago when I played this music video:

I’ve been baking and cooking a lot recently. My goal for the summer was to try five new recipes because I was in a cooking rut earlier in the year and just kept making the same meals over and over again. But August was different! In addition to those nine recipes I made for freezer meals, I’ve tried more recipes and want to share seven (yes, seven!) with you. Most of them are from Damn Delicious and How Sweets It Is, my two favorite food blogs!
- Chinese Chicken Salad (Why don’t I make more salads? This one is so good I ate it for lunch and dinner yesterday! I added broccoli, used wonton strips instead, and used a light asian dressing I had already on hand, but want to try this dressing soon.)
- Zucchini Corn Pancakes (I could eat these every day… they were delicious with a bit of sour cream on top. They freeze and reheat well too. Double the recipe for sure.)
- Copycat Chick-fil-a Nuggets (wow… so good, I felt so guilty eating these, but considering I rarely buy fast food, a little indulgence now and then is okay! Plus the creamy honey mustard is to die for)
- Zucchini Pizza Bites (Tasty and easy but you have to eat them right away. Perfect for a last minute dinner.)
- Baked Garlic Sweet Potato Fries (Sped up the process by microwaving the fries for three minutes before baking… worked like a charm)
- Banana Streusel Muffins (I didn’t make the streusel part and I used whole wheat, applesauce, and stevia… would have never known!)
- Applesauce Carrot Muffins (I took out the butter, used half the amount of honey and a sprinkle of stevia.)
Once you start freezing food, you really can’t stop. I’ve been doubling most of my recipes so I can freeze a lot for later. Then when we need a quick meal or snack on the go (perfect when you have kids, obviously) we’ve got something all ready! Have any recipes I need to try? Let me know!
I’m in a couple of Google groups for LDS people in the area, and on Saturday someone posted about getting rid of a toddler scooter. I didn’t have plans, so I emailed back right away and said I’d love to come get it. Within a couple hours, we had a brand new (to us) scooter and helmet for Eva to enjoy! I still can’t get over it. I’ve been wanting to get Eva a scooter but didn’t really want to fork out the money. Perfect solution! Eva loves it so much!
While we were downtown to get the scooter, we played at Rockefeller Park for a while. The city puts out so much fun stuff for kids to enjoy each day.
A friend of mine told me at least a year ago about the Staten Island Ferry and how I needed to do it someday. It’s free and takes you close to the Statue of Liberty. I’ve wanted to do it ever since but finally did last week! It was really neat. It was a relaxing activity and something different than we had ever done before in NYC.
Eva would not give me real smile. Thanks a lot, Eva!
This Summer, Bryant Park had a Broadway series each week. Unfortunately, I didn’t know about it until the last week… but I at least got to go to one! The week we went, they did clips of the musicals Mamma Mia, Matilda, and Motown. All three were so good, particularly Matilda. Those kids can sing. Holy cow. We’ve got to see that musical!
We brought a picnic and enjoyed the show on the lawn. The kids danced to the music too, which was adorable.
August is almost over and I feel like we have really made the most out of our time. Last week we had cooler weather and it gave me a little Fall itch for a second. It got me excited to spend that season in the city. I was trying to remember what type of things we did last Fall, then T.J. reminded me we rarely went in the city with Eva because that was the time when Eva HATED being in the stroller. I am SO glad we’re past that phase. And I’m so excited about walking through the city during the Autumn season! Remember on Gossip Girl, they say:
There’s nothing quite like Autumn in New York. But it’s not only the leaves that change. Something in the air brings out the true colors in everyone.
But let’s not get ahead of ourselves. I’m still enjoying summer and would be fine if it never ended! Here are a couple recent instagrams.
Trying to swim as often as we can since the pool closes next week. I told Eva it closes soon and she instantly screamed/cried, “NOOOO ASHLEY’S POOL… NOOOOO!” I think Eva will be the most disappointed.
More frozen meals… I’m kind of obsessed.
Our computer broke (and since was fixed for free under Apple Care… phew!) and so I had to trek around the city with Eva to the Apple store and another computer store one Monday. They first told me it was the hard drive and that it could cost up to $500 to retrieve our data since we hadn’t backed it up. Thankfully it was NOT the hard drive and everything got fixed promptly. As soon as we got it back, we backed it allllll up! It was a rough day though. The computer, and then a smoothie spilled all over the stroller and my diaper bag which was really gross and stinky. But my child was great that day and we treated ourselves a bunch so I wouldn’t have a breakdown in the middle of Manhattan.
We walked around through Central Park this weekend. I’ll never get over that place. It’s so gorgeous and absolutely charming. I know I’m turning into my mom though because I kept singing and dancing to songs from Enchanted. How can you not?
This is from a month ago or so, but I forgot to post it. We went to Central Park one Saturday and just played on the lawn all day. It was perfect.
Panera recently opened up in our mall (woohoo!). I tried going the day it opened but it was too busy, so I went on Saturday morning before the rest of the mall opened. Ashley was there doing the same thing! We had a good laugh about running into each other.I made tiny sandwiches for Eva to get her to eat her lunch. Worked for a day, but since then she hasn’t been excited about the idea.

Ashley and I made freezer meals back in the Winter and loved it so much. It took a lot of time, but I thought it was completely worth it because it helped us save money and was perfect for Winter days when I didn’t want to cook dinner, but could still have a hot meal in the crockpot ready in no time. In the summer though, I’m pretty good at cooking dinners since there are so many delicious fresh vegetables and fruits available. But breakfast and lunch sometimes are hard for me to think of ideas. If it was just me, I’d grab a breakfast drink in the morning and have a lean cuisine for lunch… but I can’t do that to my child. And I get sick of making PB&J everyday… plus, my kid won’t even eat all the time. So, enter the toddler freezer meal craze that happened this week.
It all started when Ashley made some zucchini muffins. They were a hit with her son and she was able to freeze a bunch for the future. So, I decided to make a batch, too, because I tend to copy everything Ashley does. When I pulled out the zucchini to make the muffins, I realized I had some carrots I needed to use up. Then I thought, well I might as well make some carrot muffins while I’m at it. (Does this remind you of the “If You Give a Moose a Muffin” book?) Once those were in the oven, I thought… Since there’s already a mess, let’s make some pancake muffins! And as those were cooking, I decided I needed some muffins with chocolate in them… so I made oatmeal chocolate chip muffins too. By the end of the night, I had made 96 mini muffins and 36 regular muffins (I doubled some of the recipes). I divided the mini muffins up in baggies of 6, and regular in baggies of 2, then stuck them in the freezer-even color coded the top of baggies for easy grabbing in the future. They’ve already been a huge hit in the house! Perfect to take in the lunchbox to the pool or for a snack/part of a meal.
Here are the recipes for the muffins that I used (PS-I substituted applesauce for oil, whole wheat flour for white flour, and would use a squeeze of honey instead of sugar/brown sugar… still tasted great!):

We didn’t stop there. Two days later, Ashley and I planned on making some more things for our toddlers (that taste great for adults too) that we could stick in the freezer. After some pinteresting, we decided to make the following recipes on a rainy Tuesday:
Green Vegan Pancakes
Mini Barbeque Apple Chicken Muffins
Zucchini Cups
Chicken Apple Sausage & Sweet Potato Egg Muffins
Mini Frittatas
It took about four hours, and made us wash the muffin pans about a hundred times, but between both of us, we made 36 spinach whole wheat pancakes, 50+ mini BBQ chicken apple cups, 24 zucchini quiches, 60 mini sweet potato chicken egg muffins, and 60 mini egg and pepper frittatas! I don’t know if you can comprehend how much food that is, but let me tell you… it’s a LOT! AND IT WAS AWESOME! My child has eaten SPINACH PANCAKES for breakfast now two days in a row, and she doesn’t even know. She thinks they’re just special green colored pancakes. They even taste like regular pancakes, much better than those banana and egg pancakes.
So, there you have it. Eight great recipes for little muffins/meals/snacks you can grab from the freezer whenever you want! I just microwave them in a paper towel for about 15-30 seconds depending on the item. Here are a couple more tips for the process:
- Use LOTS of spray on your cupcake pans because it gets very old scraping them out and washing them over and over again.
- You could probably make the BBQ muffins on a cookie sheet, like meat balls.
- For the zucchini cups, do it as mini muffins because they’re very heavy and kind of fall a part if you don’t cook them long enough in the large muffin pan.
- The chicken apple/sweet potato muffins don’t need NEARLY as many eggs as the recipe says… we had TONS left over, which is why we ended up making the frittatas. It was very strange.
- The sweet potato ones are my favorite from the second list… they’d be perfect for a brunch if you’re throwing a baby shower or something. So delicious.
Okay… ready, set, go! Go make your freezer meals and feel like a champion of a mom for a day!
It’s the middle of August already?! Thankfully we’re not in school or else I’d be so bummed summer is coming to an end, but around here… We’ve got at least another month or two of beautiful weather (and time to keep working on my summer bucket list).
We’ve had a busy and fun couple of weeks since we got back from Utah. Eva has stayed on Utah time though, which in some ways is really nice because she sleeps in until 10 about everyday; we even had a couple of 11 am times. But then that meant she wouldn’t nap, or wouldn’t nap until like 5 pm. It has been throwing everything off and I really need to just wake her up earlier, but then the mornings roll around again and I’m like, “What the heck?”
Other than Eva sleeping in, we’ve gone into the city a bunch of times just for fun and a date, played at parks, had a couple girls’ nights, gone on bike rides, and went swimming over and over again. Eva swims without my help now, well.. with the little floaty thing. But it’s pretty awesome! She loves jumping in and keeps having me scoot farther and farther away from the edge. She’s got the doggy paddle down with the floaties on so hopefully next year we can try it without the floaty.
Eva has been cracking us up lately, so I’ve got to write a post about the things she says soon before I forget it! That girl is such a character. It also occurred to me that she will be three in less than four months. THAT IS NUTS.
If you ask T.J., he might tell you I’ve lost my mind because I’ve been cooking/baking freezer meals like a mad woman. But now my freezer is packed with hundreds of healthy mini muffins/cups and it’s amazing. I’ll share some of those recipes with you in a couple of days.

This was taken at a really neat splash pad and park in the city near the WTC. It’s hidden by tons of trees and you feel like you’re in the mountains.
I was kind of dying at how cute Eva looked the other day riding her bike and blowing bubbles. Funny story, we just bought 6 mini bubble containers, and Eva went through like three in one hour because she kept spilling it over and over. It was so funny and cute because each time, she’d look at me and say, “Ooooops, sorry!” I think she was worried I’d be mad, but I didn’t really care since it was outside and they’re so cheap. So, I’d laugh and she’d laugh.. so darling.
We had a farewell party for a friend in the ward. We played games and then watched this hilarious movie called Austenland. Go watch it now. It’s very funny and very cute. Plus, Keri Russell… one of my favorites.
So much piano playing last weekend. I’m grateful for our church that utilizes everyone’s talents, but I sure wish a couple more people in our ward knew how to play piano 🙂 .
We have been playing a LOT of hide and seek these days. Eva’s quite a pro, as you can tell.
One afternoon, Ashley had an appointment in the city right next to Madison Square Park, so I strapped Brooks to my back and two-kidded it for a couple of hours. It was a strange experience to feel like I had two children. Both kids were perfect the entire time (excluding the time Eva thought it was hilarious to run around the part of the park that was closed off and I chased her like a crazy person, with Brooks on my back… everyone in the park was staring at us, I swear, and probably laughing at us… oh well). Anyway, this is NOT an announcement of any kind. But it was kind of an invigorating couple of hours.
More hide and seek action. This one makes me laugh so much.

Another friend in the ward suddenly moved and we had a farewell party at the splash pad. Look at this great group of gals!

T.J., Eva, and I headed down to BYU on Wednesday where we visited our old offices and walked around campus a bit. It was so fun to be back on that gorgeous campus. Made me miss the old days! After lunch, we went to the renovated Bean Museum on campus with T.J.’s parents and my sister-in-law Lindsay, along with her two kids. I was pretty impressed with the renovations and the kids enjoyed it, as well.
