…Whatcha got cookin‘?

I’ve been baking and cooking a lot recently. My goal for the summer was to try five new recipes because I was in a cooking rut earlier in the year and just kept making the same meals over and over again. But August was different! In addition to those nine recipes I made for freezer meals, I’ve tried more recipes and want to share seven (yes, seven!) with you. Most of them are from Damn Delicious and How Sweets It Is, my two favorite food blogs!

  1. Chinese Chicken Salad (Why don’t I make more salads? This one is so good I ate it for lunch and dinner yesterday! I added broccoli, used wonton strips instead, and used a light asian dressing I had already on hand, but want to try this dressing soon.)
  2. Zucchini Corn Pancakes (I could eat these every day… they were delicious with a bit of sour cream on top. They freeze and reheat well too. Double the recipe for sure.)
  3. Copycat Chick-fil-a Nuggets (wow… so good, I felt so guilty eating these, but considering I rarely buy fast food, a little indulgence now and then is okay! Plus the creamy honey mustard is to die for)
  4. Zucchini Pizza Bites (Tasty and easy but you have to eat them right away. Perfect for a last minute dinner.)
  5. Baked Garlic Sweet Potato Fries (Sped up the process by microwaving the fries for three minutes before baking… worked like a charm)
  6. Banana Streusel Muffins (I didn’t make the streusel part and I used whole wheat, applesauce, and stevia… would have never known!)
  7. Applesauce Carrot Muffins (I took out the butter, used half the amount of honey and a sprinkle of stevia.)

Once you start freezing food, you really can’t stop. I’ve been doubling most of my recipes so I can freeze a lot for later. Then when we need a quick meal or snack on the go (perfect when you have kids, obviously) we’ve got something all ready! Have any recipes I need to try? Let me know!
