Stuffed Green Peppers

6 large bell peppers
1 lb. lean ground beef or ground turkey
1/2 c. chopped onion
2 cloves garlic
1 16-oz. can tomato sauce
1 c. cooked rice
2 tsp. salt
6 oz. shredded mozzarella cheese

Preheat oven to 350 degrees.

Cut tops from green peppers; discard seeds & membranes. Add green peppers to boiling water and simmer for 5 minutes, uncovered; drain.

In skillet, cook beef and onion until meat is cooked. Drain off excess fat. Add rice, salt, garlic, 1 c. tomato sauce, and a dash of pepper.

Place peppers on 9×9 ungreased pan. Stuff peppers with meat mixture and pour remaining tomato sauce over peppers. Cover with foil and bake for 45 minutes.  Remove foil and sprinkle cheese over peppers.  Bake an additional 15 minutes.

It’s a really easy and tasty recipe.  You can add additional ingredients to the mixture, as well, such as tomatoes or green peppers.  Next time I make the recipe, I’m going to get a variety of bell peppers, so the dish is colorful!

    So, was it good? We had stuffed peppers in Russia, and they never turned out terribly well.
    By the way, I love that you put recipes up. You inspire me to cook more.
