Orange Teriyaki Beef with Noodles

Tonight I made this quick and easy recipe from my Betty Crocker cookbook. It takes just about 15 minutes and it’s low-fat, so you’ve got to give it a try!

  • 1 lb beef boneless sirloin, cut into thin strips
  • 1 can (14 oz) beef broth
  • 1/4 cup teriyaki stir-fry sauce
    • I forgot to get this at the store, so I made my own out of 1/4 cup veg. oil, 2 T rice vinegar, 2 T soy sauce, and 2 T brown sugar.
  • 2 T orange marmalade
  • Dash of red pepper
  • 1 1/2 c frozen sugar snap pea pods
  • 1 1/2 cup uncooked fine egg noodles

1. Spray 12-inch skillet with cooking spray; heat over medium-high heat. Cook beef in skillet 2 to 4 minutes, stirring occasionally, until brown. Remove beef from skillet; keep warm.

2. Add broth, stir-fry sauce, marmalade and red pepper to skillet. Heat to boiling. Stir in pea pods and noodles; reduce heat to medium. Cover and cook about 5 minutes or until noodles are tender.

3. Stir in beef. Cook uncovered 2 to 3 minutes or until sauce is slightly thickened.

I guess since T.J. and I covered all four servings, it really wasn’t low-fat, but at least we got a serving of vegetables in the process.
